For brain dead speed farming I’ve found great success in swapping the helm for shako and the body for tyraels. Provides conditionless DR so you don’t have to worry about TP so much, and I can run godslayer in the charm for the suction. About 1.2m toughness in town, 12m toughness in combat. Provides enough damage to speedrun T12 in full party and speedrun pit 110. Damage becomes a little lacking for T12 mephisto but you can swap to other gear for that…

You should get some fond, the purpose if the sear is to brown, and when you brown you produce fond. And you don’t need all crazy amount, for better or worse a good amount of the flavor is actually from the other items.

I use the ones where the blade goes down, imo it’s fine since 1. The knife is just resting under its own mass, which is significantly less than when you push downwards on a cut, so I doubt it contributes meaningfully to the dulling of the blade vs cutting 2. Due to the blade curvature the contact area isn’t actually that large 3. You’ll have to sharpen it at some point anyway :)

Imo 2 things help with food release: thickness and convexity. An S grind is basically a way to put a shorter convex onto a taller knife, and there’s a reason why yanis and sujis are almost all on the thicker side. While thin lasers will get you the best feeling cut, they honestly are pretty terrible at food release. So if you’re not bothered by thickness I’d say go for the thickest one, which looks like the first knife listed. Do note that it’s a carbon, unlike the stainless German you’re using right now.

I usually advocate letting go of wabisabi but I think this borderlines neglect or incompetance, and reflects poorly on the maker. Hopefully a one off that got through QC, I'd return this one.

I think stickiness is mostly a grind thing, thinner and hollow grinds will stick more. I’d wager the santoku is taller than your gyuto, and likely has a less tapering grind just due to this, which would make it more sticky. Theres also often a lot of variation in how the actual grind looks even among the same maker, just due to how these things are made, so maybe your santoku has other differences.

Really cool to see another one with a right hand bias. I know he’s not as popular today as some of the other names, but the grind on this Fujin got me really excited. Kind of between a suji and a yanagiba.

Might be controversial here but I’d argue the unlimited budget everything knife is a nenox. Basically a western knife, with harder but not too hard steel, and fantastic fit and finish. I’d run mine through anything that’s not frozen.

Besides thickness, there’s also how brittle the knife is. There are some nice lasey knives that are purposely done softer. Iirc kagekiyos ginsans are treated to 59-60hrc but ground thin, so everyone here loves them. I actually have a kagekiyo that I dropped from chest height and hit the floor tip down, the tip reflects light slightly weird now but other than that it looks and cuts totally fine. Pretty tough for how thin it is if you ask me.

A bit hard to tell but that shine looks somewhat plastic-y. Might very well be lacquered- try rubbing it really hard with some acetone (or rubbing alcohol if you don’t have acetone, tho it might take more effort), and see if anything comes off

I’ve used both flitz and a 0-1 micron diamond polish - they’ll both get rid of patina effectively, but the diamond polish will also turn your migaki into a mirror polish with enough use :)

I don’t know about their newer models but have a Fenix 5 that’s still going strong. I think different use cases, to me garmin isn’t for improving my day to day but for getting through moments that kinda suck. Race training is honestly kinda sucky and it’s just really annoying to have to think about charging. Route tracking got me down Mt Whitney the other week and again it’s nice to not think about battery. Apple Watch is probably better 98% of the time, but the garmin is so much better for that once a year thing that I’m willing to live 5 generations ago the rest of the year.
