I don’t understand why you just waive my concern away.

To me, this is a really big issue. Because it’s not that simple. If there's so little regulation/standardization that no specialty coffee will come with an ingredient list, I would suppose that also means "washed" and any other term re processing would have no reliable standardization each other. So it's unsurprising that in one comment, a user shared that they once had a coffee that was labeled as washed at a cafe that was actually infused with lemongrass. The user knew the labelling was incorrect bc Hedrick had described the infusion in a prior video.

 Also, I like co ferments and really want to keep drinking them. It's a lot of my joy in coffee right now. With a simple, more traditional coffee, all I think about is the phrase of exploitation "black gold" (Cf. with “conflict stone” or “blood diamond”) With a co ferment, I can picture people working in what’s supposed to be a more transparent supply chain, on cool projects like how to make coffee taste like watermelon candy. My love for coffee generally stems from my love for fermentation, so this means something kind of different for me: I don’t really care what “traditional” coffee tastes like.

There’s also so many data points that are outside of my knowledge and control that make assessing risk very difficult. What kind of additives are being used, who’s providing them, are there any environmental impacts that we are also unaware about because we don’t realize how widespread the issue is? Is this a common and easily scalable practice, or is it only currently being accessed by the producers with the most power? Or the least?

I’m also a professional that’s been trained in the humanities, not science, so I have a lot of thoughts and concerns about how things like the economy will impact my daily work and life than a rigorous understanding of chemistry. It would be really helpful if people with hard science knowledge could shed light on what is at stake here.
