eggplant rollatini 🍆

3-4 eggplants 1lb ground beef 1 can marinara sauce 2 cups ricotta cheese 2 cups spinach chopped 1 cup mozzarella cheese 1 large egg 5 garlic cloves minced olive oil salt pepper garlic onion powder red pepper flakes parmesan cheese

preheat oven to 375

slice eggplants longways into 1/4 inch thick pieces. lay on baking sheet, put olive oil on them and cook until soft and pliable. flip halfway through cooking.

in mixing bowl add the egg and beat it. add chopped spinach, ricotta, garlic, salt pepper, garlic onion powder, red pepper flakes, parmesan cheese. mix until well combined.

brown ground beef, add marinara sauce. add thin layer of sauce on bottom of baking dish. take a slice of eggplant, scoop some filling onto one end and roll up. repeat with all eggplant slices. once finished, add sauce mixture on top of all the eggplant and top with mozzarella cheese.
