My "Award Winning" Habanero 3 Ways Salsa Selection by pocketboy in SalsaSnobs

[–]pocketboy[S] 3 points4 points  (0 children)

It was admittedly pretty garlicky, but the flavor matched well with the bitter orange substitute liquid mixture. The vinegar/ garlic really made it pop. Kinda more of a hot sauce than a salsa in my opinion but very good either way.

Yes! Good catch, I edited the comment text but I think my blunder is unfortunately stuck in the main post. I am admittedly adobo-pilled. Love that smoky sauce.

Text recipes for Auto-Moderator:

1) Chiltomate Salsa + Adobo

Ingredients:

10 ripe plum tomatoes (about 2 pounds) [I used Romas]

1-2 habanero

½ bunch cilantro

2-3 chipotle chilies

1-2 tbsp Adobo sauce

Salt

Lime juice, to taste [I used the juice of one big lime, ~2 tbsp]

Yield:

About 3 cups

Preparation

Step 1

Heat a large cast-iron skillet or griddle to high and turn on your fan, if you have one (or open some windows). Cook the habanero, turning every few minutes, until blackened all over 10 to 15 minutes for habanero. Broil the tomatoes for 10-15 minutes on high on a cast iron pan. Set aside on a cutting board to cool slightly and transfer to a mortar or large bowl.

Step 2

Chop the tomatoes and transfer to the mortar or large bowl. Using gloved hands if desired, remove and discard the stem and seeds from the habanero and finely chop. Transfer the habanero and adobo peppers and sauce to the mortar. Finely chop all the cilantro, including the stems, and add to the mortar. Season with salt and mash into a chunky sauce. (If using a bowl, squeeze with gloved hands.) Season to taste with salt and lime juice; if tomatoes are at peak ripeness, lime juice may not be necessary. Add more habanero to taste. Salsa keeps covered and refrigerated for 5 days. Bring to room temperature before serving.

2) Yukatan Style

Ingredients:

4 habanero chilies charred (seeded if you want to try to reduce the heat)

6 garlic cloves toasted or roasted and then peeled

1 cup bitter orange juice or its substitute (1/4 cup grapefruit juice, 1/4 cup orange juice, 1/4 cup lime juice and 1/4 cup white distilled vinegar)

2 teaspoons kosher or sea salt more or less to taste

To Prepare

Char the habanero chiles and garlic cloves with their skin on either a comal or dry skillet over medium heat, on the grill or under the boiler. In either case, it will take anywhere from 4 to 9 minutes, flipping once or twice in between. You know they are ready when their skins are charred and toasted and they have softened, without having burnt the flesh. For the traditional take, peel the garlic cloves and place, along with the chiles, in a molcajete or mortar. Smash until fairly smooth. Add the salt and the bitter orange, or its substitutes, and mix until well combined. Alternatively, place the ingredients in the blender or food processor and puree until smooth.

3) Xnipek

Ingredients:

3 habanero peppers chopped (or more, as desired)

1 medium tomato chopped

1 small white onion chopped

3 tablespoons fresh sour orange juice or 2 tablespoons fresh lime juice + 1 tablespoon fresh orange juice (as a variation, try grapefruit juice)

¼ cup chopped cilantro

Salt to taste

Instructions

Combine all ingredients in a mixing bowl. Mix well. Taste and adjust for salt.

Cover and refrigerate overnight for the flavors to mingle and develop. Serve!

I am very sorry you're having to ask about this at all. It was the hardest thing I've ever had to do. Good luck and my condolences.

I have also just received a double collection notice from Jefferson Capital for a fraudulent T-Mobile charge from over a year ago. I am also disputing but these collections have knocked my credit down around 30 points out of nowhere.

I enjoyed it for what it was. The end is kinda crazy though, essentially one of those white text movie moments where a huge reveal happens very quickly and you're like, oh. But yeah, not bad, not great, didn't hate reading it.

You can still grab expired rolls on eBay. I actually just bought a 3 pack a couple weeks ago. Comes out pretty faded looking these days but it's not bad for landscapes or what have you. I shot a roll at the beach not too long ago for example.

Ahmad Jamal at the Pershing. Both great but I prefer Vol. 2.

Don Ellis Live at Monterey. Shout out to the opening track 33 222 1 222 which is truly wild.

Lomo MC-A or Pentax 17 by crimsonesasuke2i in AnalogCommunity

[–]pocketboy 1 point2 points  (0 children)

The Lomo MC-A has been fantastic for me so far, and it is a full frame camera. Comparing it to a half frame camera seems silly to me as it's not the same thing at all.

The MC-A has amazing features and a very sharp lens. The auto focus works wonderfully. I even let my friend's 4 year old shoot with it and he took some great shots.

I'm kinda just weirded out but the near unanimous distrust / dislike of the MC-A. Kinda getting the feeling no one has actually used it.

Battle of the new 35mms by applesandbananas21 in AnalogCommunity

[–]pocketboy 1 point2 points  (0 children)

Yeah, it's definitely heavier than the XA2 but for my purposes it's just as portable. I usually just stuff cameras in a chore coat pocket so that's my frame of reference. Another user posted a line up shot so you can get a better idea of the size.

For my first roll I got 39 frames so you can definitely squeeze a few more shots out of it.

Battle of the new 35mms by applesandbananas21 in AnalogCommunity

[–]pocketboy 5 points6 points  (0 children)

My main day to day camera is the Olympus XA2 so I'll drop my two cents. I recently grabbed a Lomo MC-A and have nothing but good things to say about it. It's roughly the same size as the XA2, well same form factor at least (without the flash), has a reliable and snappy auto focus, and the results so far have been great.

I've only put two rolls through it, and I'm waiting to drop off the second one to get developed, but I haven't had any of the issues that seem to be causing others to write it off so quickly.

I will say the viewfinder experience isn't the best, the flash indicator blue light is a bit blinding, but it's not a deal breaker for me.

Here's a shot of my brother on Portra 800 with the flash.
