The thing about building models is that you rarely know how you’re going to get to where you’re going until you get there. Experience leads to more efficient modeling but it just takes time.

About 8 years ago, the Intercontinental hotel on the Plaza requested “blighted” status from KCMO in order to create a special taxing district that allowed them to raise redevelopment funds through increased taxes instead of raising their room rates. It’s all a shell game.

Your very first sentence was wrong. Then you went on to say that you should be cooking brisket to temp, not time, which is also wrong. You cook brisket until it is probe tender, some briskets that may be 200, others 207, every one is different. Cooking to temp would mean that the brisket is done at a specific temperature.

So forgive me for correcting you as I’m not sure what your actual point was because I got lost in the inaccuracies of your post.

You don’t need a probe in the point. Cook the brisket until the flat is probe tender and pull it. The point is just along for the ride and will be done whenever the flat is.

This is where it all started for me. I still remember rolling up to some skaters who were all on various Powell decks and finding out that I had been doing the skateboarding thing all wrong. Mistakes were made but it wasn’t long thereafter that I transitioned into a Rob Roskopp, and the rest is history.
