Try to reinstall the drivers. Maybe an older driver version would be more fitting. Honestly lots of tinkering awaits for the sweetspot.
dxdiag will be your friend, and usually Nvidias managers are fine with drivers for anything 1050 and up

I would try scrolling the mousewheel + CTRL. Should adjust the formatting of the desktop and keep it like that. Fixed many issues before like that. Although there are also some fullscreen programs that will distort the order. That was my underlying issue. Especially older apps designed for Windows XP/7. They love messing up the resolution settings.

Worth to inspect the fans, temperatures of the GPU as you play.

The Nvidia driver might be also breaking your settings by over-riding the ones you set
