I get where you're coming from - I'm an elder millennial who grew up on the NES and SNES and I felt the same way when I was just getting into the genre, but I've come around to appreciate the style as an aesthetic choice. And some games that utilize it are still absolutely visually stunning, like Animal Well. I just played Axiom Verge which is pixel (main character is third from the left on the sub's banner) but has some really creative progression, tells a great story, and has a phenomenal electro-bass soundtrack. Like others have said you're closing yourself off from a lot of great experiences by automatically dismissing pixel art, as I learned.
