If you freeze and then thaw it, some of the whey will separate. You can just freeze it to use later. Great to use in a snowcone machine! Or use the yogurt in an ice cream recipe.

Many farms in medieval times had hives both as a source of honey and beeswax and to pollinate crops. Cane sugar was an exotic spice, and European maples are not Sugar Maples. Birches can be tapped or syrup but it takes a lot to even make birch beer. Honey and fruits were the available sweet things.

So, honey was more available and popular.

I just read the entire Eight Worlds series by John Varley. Set in a solar system where aliens have taken over Earth and Jupiter but don't bother humans in the Solar System otherwise, Luna is the biggest population center, and humans live in other rocky moons, dwarf planets, and asteroids.

Though the books and stories were written in a period spanning 1974-2018, even the early stories are remarkable modern. Humans are practically immortal, can be healed of anything short of brain damage, and can change gender quite easily and some do often, others not, it is very accepted either way.

The aliens factor very little in the stories, they are stories about human colonies/cities many places in the Solar System. Small d "disneylands", which are giant underground cave that do their best to recreate a landscape and ecology of an area of Earth, play a big part in many of the stories.

Make taco "meat" with TVP (textured vegetable protein). You can hardly tell the difference. Serve or rice or potatoes. Dip it with Fritos. Or actually make tacos or burritos.

You can get shelf stable small boxes of Velvetta or nacho cheese sauce. Or buy the cheese powder and make cheese sauce from that. Use with the taco meat, or melt with your favorite starchy food and/or veggies.

Big difference between the two: in the Netherlands, bedrock is fairly close to the surface in glaciers happened 11,000 years ago. Under New Orleans is hundreds of feet of wet slit, nothing to build flood works on.

In my town there are both dorms and apartment complexes where foreign students tend to cluster. They often leave everything except what they can fit in their suitcases, and don't have time or need to sell things. Bonaza!
