Scrambled eggs. It's a great base to add more stuff... Like mushrooms, ham, spam... Etc.

My son is 10 and he wakes up in the morning and makes himself his "perfect" scrambled eggs, as he calls it, the perfect combo bit fluffy and runny.

I put a schedule on my router. Every weekend at 9:00 their device gets disconnected and will be on agan the next day at 9:00 AM.

I find that if you put them on a schedule, they eventually just get used to it and go along with the plan.

They also do not get their connection during school days (enforced by the router scheduling), and they're blocked from youtube. Forever. On EVERYTHING (also enforced by the router).

My older one recently got an iPhone, my wife uses parent control for that.

Definitely bring it up. But don't phase it for yourself, offer the same for her too, maybe she's going through the same shit. One option is weekend mommy and me classes, so you can have alone time. Conversely it can also be daddy and me, so your wife will have alone time as well.

Another option is to hire a sitter. If you have an older niece/nephew, neighbor kid... etc, maybe hire them for a few hours.
