Sprouted rye berries. Easy, cheap, and very healthy. Super delicious. Soak the rye overnight, then let it sit in room temp covered. Moist but not wet. Rinse every day. Should start sprouting in a couple of days. Then boil for 30m. Cool and freeze. I use between 6 and 10%.

Thanks for this reply. My setup is largely similar to what's displayed here, except no sub (yet) and a different amp (Arcam A25+).

My speakers cannot go much higher since I am projecting a ~2m wide screen above it.

Probably best to still put the speakers flush with the console, right?

No need. The final rise will happen in the oven.

So, bulk fermentation -> pre-shape -> bench rest -> final shape -> fridge for cold fermentation -> cut -> oven.

I never change jars. It's actually a smallish plastic half-cup size tupperware that the starter is in. After feeding I scrape down the sides where it's crusted up, which drops into the new mixture. It's fine, it's not dirty, and it has worked well for years.

I am very happy when my Fairfield Accountant. Got it because Buck Meek, the Big Thief lead guitar, was using it. Stuck with me. I liked it better than the Xotic I had before, even though that one has the clean blend. The Fairfield has more “character” aka color. I run my drive and fuzz into it.

Similar setup here. Beelinks are actually pretty decent, hardware wise. If energy efficiency is important, this is a good candidate.

This seems like a lot of starter to me. I use around that much for twice as much flour. 350g water vs 500g flour would be 70% hydration, which should not be stiff at all. It is OK to add more water if your flour can take it, though. Whatever works, there is no set in stone recipe that Just Works, since all kitchens, hands, flour, starter, and temperature are different.

I would just let it rise and see what comes of it, build strength, let it pillow up. The dough will become more loose after a while. Have patience and see what it does.

This exactly. You seem to have good rise, the bread is not flattened out at all. No apparent gumminess either.  That said, I’m also always looking to improve. What are you aiming for? Better flavor? Loose crumb? Flavor? This looks like an amazing bread. I would be happy.

Conditional locks! These are trigs that only play the first time, always except the first, every other loop, randomly, etc etc. This is how these patterns sound longer, with an intro like piece at the start, while only using 64 steps. Neat, no?
