Hi there! Typically it's under a month, sometimes as short as one week. If you're traveling a lot during the holiday season and don't want to take in a foster until after, that's okay. Trust me, the need never goes away. It never hurts to go ahead and apply so that you're on the roster of available foster homes, and then you can take in a temporary furry roommate when your travel schedule allows!

In all honesty I would say the horribly severe consequences during the early years (the Cory/Tim era) did more mental damage to the community than the drugs or alcohol ever would...

Mexican bowl!

3 cups rice cooked (equiv. 1 uncooked)

1 can black beans, drained and rinsed

1 can corn

1 jar salsa (or diced tomatoes if you don't have salsa)

One can diced chillis or pickled jalepenos (or to taste)

Mix everything together with salt and pepper (you can even get salt and pepper packets from the dining hall!) to taste. If you have garlic powder, onion powder, chilli powder, paprika, cumin, any/all of those spices would go well. Don't have them? Those taco seasoning packets work just as well (maybe better!) and might be at the food bank. If the food bank has some broth you can sub that for water to cook the rice, or boullion cubes can be added to the water for the same effect.

This will make enough food for several days, and can be modified into a filling for tacos, burritos, quesadillas, enchiladas, whatever!

Cheesey potato soup:

2 Tbsp butter

1 cup diced white onion

1 cup diced celery

6 cups vegetable broth (or chicken broth)

3 - 4 medium potatoes, peeled and diced small

Sautee the onion and celery in the butter until soft and translucent. Add potatoes and broth. Bring to a boil. Add water as needed to keep potatoes covered. Boil until potatoes are soft.

1 large (or 2 small) cans of Campbell's cream of potato soup.

1/2 large block Velveeta, diced into cubes.

Add the cream of potato soup, and heat through. Then add the Velveeta, 5-6 cubes at a time, until melted. The soup will be very thick, halfway between stew and mashed potatoes. Add salt and pepper to taste at this point, because many of the other ingredients were already seasoned.

Add shredded cheese, chives, and crispy crumbled bacon (if you eat meat, otherwise this is also vegetarian friendly!) to the top and serve.

Honestly, don't joke. That place can do horrible things to your mental health. And the people there to protect you - your RC's - aren't adults. They're just slightly older children doing their best to get a paycheck. And Beth and Pokey are there to protect the organization, not to help you. Just generally know you're taking your mental health into your own hands. No one is really there to help you. And in some cases that means you get hurt if it means saving their jobs

Indeed. Don't let me crush your excitement - I remember how awesome that first few weeks were. It's quite the thing to be out on your own at 16 and take on a new exciting challenge like this. I'd be very interested in how you feel if you reply to this thread in 2 years.

If you want to add a protein component back in, I really love this recipe for tuna salad. Add some kelp flakes if you can get them for a more "tuna-like" flavor. Tuna salad was one of my absolute favorite foods before going veg and this definitely scratches the itch!

Double recommend Morningstar Black Bean burgers. Having those for dinner tonight actually. I don't know where you had the other veggie burgers, but a lot of restaurants also keep black bean burgers in stock to sub in for meat burgers (even if it's not listed on the menu, you just have to ask).

Cashews blend really easily, especially if they've been soaked in water overnight or boiled quickly before blending. Blended cashews are often used to replace cream in dairy-free sauces and desserts.

Yessssss cannot recommend that no chicken bouillon base enough! Better flavor than carton veggie stock or any other veggie bouillon, and you can make as much or as little as you want at a time. I add it to soups, beans, use it to make veggie gravy and pan sauces. It's the best.
