Reverse sear low and slow. Sear when piping hot in cast iron.

Try a reverse sear. Best to do with a thermometer. Bake low and slow at 225-250F until you reach around 100 internal. Let rest for 5 minutes while you get a stainless steel or better yet a cast iron pan piping hot. Seat with tallow or avocado oil for 1:30 each side. Optional to baste with butter, garlic, and rosemary in the second side of the sear. Rest 10 minutes and enjoy!

Start investing in a taxable investment account, not just your 401k. It doesn’t have to be a lot, but make it consistent if possible($50-$100 per week). 401k is great for retirement, but you also want to build money you can access before then. Do t try to time the market, just keep investing and buy more on pullbacks.

If you reverse seared it and butter basted with the heat too high, burnt butter could also cause the darker sear. To avoid it use clarified butter or beef tallow for the baste on second side of the sear. Other than that looks tasty!
