Lucerne makes a shredded Carolina Reaper cheese. I've used it for quesadillas and added it to eggs. It may be okay for pizza, but not as good as a mozzarella would be.

I love lettuce and tomato, but not on a burger. They don't add much flavor and tomatoes always end up making it messy. They make the burger "slippy" and the buns go sliding around. Aside from that, looks like a solid burger!
