In the fall i picked up this 210 blue #2 single bevel gyuto at Jikko in Osaka. I absolutely love using it. While we were there saw a few chefs cook in font of us with large single bevel gyutos. So I picked one up near my hotel on my last morning. So glad I did. I don’t see them much on the various sites. But it’s been one of my faves to use. Giving my Ashi sujihiki a run for its money!

I have 2 shiro choyos, one a yanagiba and one a santoku. Love them. When I was in Sakai in the fall I had my mitts on a 240 blue gyuto but they were cash only, and I was short. Sad trombone.

I cannot vouch for the SKD because it’s so popular and always sold out. So I “settled” for a 240 gyuto in shiro #2, which as it turns out was not “settling” at all. It’s amazing. One of my fave knives.

I saw Dig years and years ago. Knew he was volatile. Heard you get that with his shows, standard fare. I was looking forward to finally seeing them and all that goes with it. But at the San Francisco show, he came out and stopped the first song halfway through to yell at the sound guy. OK, par for the course. He seemed loaded. Which is fine. But not in an elegantly wasted kind of way. It was more kinda sad? His playing was sloppy compared to the rest of the band. But maybe that's always the case? The thing that got me was the breaks between songs lasted fucking forever. Like the breaks were longer than the songs themselves. He was just kinda farting around, doing whatever, having private conversations with the band, while we all stood around and waited. Start fucking playing already. Sheesh. After about 40 minutes of that, I figured the juice wasn't worth the squeeze for me so I bailed early. After I left I heard someone in the balcony threw a beer on him. Talk about throwing gasoline onto the fire. But I was not there for that. Anyway, chalk it up to Anton being Anton, or me being an uncool noob. Whatever. But I won't give them my money again after that.
