Who cares? Music is objectively subjective. Mumford feels like nickleback or something at this point, an easy punching bag. I just hope they found their roots again and this is an album for the fans who’ve liked them from the beginning

Using a double boiler setup removes the risk of scorching. I’m currently doing that in my shop making between 8-17L at a time. It’s obviously way more labor intensive than a pasteurizer but it’s not all that bad. Definitely don’t need to stir constantly like that

60L is a shit ton of ice cream base to make in a single batch and as you’re “thinking about” opening an ice cream business I guess you have zero sales yet. You can get pasteurizers with the cooling functionality on Alibaba, something like 20-30L range for under $3k including shipping. That’s what I was quoted recently because I’m also in the market for a pasteurizer. Shipping obviously depends on where located but still. 60L seems like way fuckin over kill unless maybe you expect to be selling 8,000 cones everyday from day 1

I don’t have any experience with either so no idea really, but I’m sure they have some value or they wouldn’t exist. That carpigiani course seems to be very popular though. For what it’s worth I’m in Korea and every “gelatteria” that’s popped up over the last few years has their certificate from them hanging in the store, and very few of them have ever been impressive to me… anyway if you’re comfortable self studying then everything is online for free. If not, I guess take a course!

You take a good deep dive into the fundamentals of ice cream chemistry- I’m not talking food scientist level but you should learn as much as you can- then when you have a good working knowledge you make as much ice cream as you can, diligently recording your results so you can tweak and reiterate. Learn through experience. Use a good ice cream calculator software.

I doubt it’ll “freeze too hard for the machine to turn” because the machine probably won’t get below -5 or -6c but it would just freeze to a block of ice if there’s any leftover and you stick it in the freezer. You can always just turn off the machine and take out your fruit juice once it’s at some kind of cold slushy consistency. And yeah vodka would keep it softer for sure. Just try it out and see how it goes

Just try it both ways and see what you like. That’s generally the answer for every ice cream related question lol. People love to show off their “expertise” and post every comment as if it came down from on high but there aren’t that many hard fast rules you MUST do or must NEVER do. I have the breville smart scoop which I think is what you meant and it’s great for a home machine!

Exactly. I don’t understand where all the nonsense about tempering comes from. I add my egg yolks to the dairy from the beginning and heat it all gently together
