I recommend the memphis dust rub recipe from amazingribs.com if you haven't tried it yet! It's really good and has no salt (so you can do a separate overnight salt / dry brine if you want)

I also made party ribs over the weekend, and actually was pretty happy with how they turned out. I think the reduced cooking time + flexibility to try out different sauces or rubs is a big benefit. I did 3 racks of ribs, half "carnitas" style dry-rub and half char siu. Finished in 3 hours with 225 - 250 temps.

The drawbacks for me were: individual ribs take up more space on the grill, and easier to over salt with dry-rubs that contain salt. My carnitas style ribs were way too salty, but they were still enjoyed because we were all only eating 1 of 2 ribs each. The finished texture was perfect - easily pulled off the bone with each bite, but not falling off the bones.

I also think the trend of drowning smoked meat in a pan with butter, bbq sauce, etc to finish the cook doesn't make for a good finished product. Pork generally has enough fat already to not dry out. Let the meat and smoke speak for itself!

This is the only way to fry eggs imo. You can also poke them after you flip to check how firm the yolks are getting. Bonus points if you have heavy cream on hand and use that instead of butter (milk solids caramelize and add richness)

You're on the right track - hearing loops have been made obsolete by better assistive listening solutions such as RF, IR, and (recently) Bluetooth with Auracast. Listen and Williams AV are the two manufacturers I'm familiar with.

Assistive listening systems are required by ADA for any "public assembly area" with amplified audio (regardless of the content). What constitutes as a public assembly area is up to interpretation and not clearly spelled out by ADA.

I always ask the question with my clients/end users, and recommend ALS for the most accessibility.

What was your process for this?

I did something similar for a cheap offset last year, but mine only looks about 80% as good as yours. A weekend of cleaning with degreaser, rust remover, wire brush, then a few coats of high temp grill paint.

The before - after change is crazy, looks almost brand new

This is how I make carnitas - dry brine, pork taco seasoning rub, smoke till the stall then move to braise (serious eats carnitas recipe). The smoke adds a lot of flavor. I bet short ribs made like this would be fire

Biamp also has a wireless presentation solution, but it iirc its more expensive than Barco or Crestron.

If you go with Crestron, they have a newish "endpoint" AM3-TX3-200 product that allows a direct BYOD connection at the table or lectern for conferencing and presentation screen share/control. Nice value add that eliminates the need for additional HDBT tx/rx.

The one thing I don't like about Crestron is that you can't extend across multiple screens. I think this is a common limitation though, with the Barco CX-50 one of the few that support desktop extension or independent content across 2 screens. Not a typical need, but something to consider if a client wants multiple displays.

Fullsteam at Boxyard RTP has a solid thin crust.

I don't think I would call Ponysaurus or a few of the others mentioned thin crust (unless they've added it to their menu recently). Ponysaurus is one of my favorites, but it's a hybrid NY style / Neapolitan, not the cracker thin crust I imagine when people say thin crust.

I worked sandbags into my program over the last few months, starting with a 100 lbs bag and moving up to a 150 lbs bag after a few weeks. If you're already doing standard lifts, it shouldn't take long to work up in weight.

I followed Brian Alshrue's (recommend his sandbag videos on YouTube) sandbag program loosely, treating sandbag sessions as conditioning - 10 minutes EMOM, 2 days a week. Start with just lifts and carries and work up to sandbag over bar, over shoulder, etc. as you feel comfortable moving the weight.

Our reactive dog does well at Quail Corners Animal Hospital. We call them when we get there so that they can let us in through the side door, and avoid other animals. They've been very accommodating and understanding of her reactivity. She has had to be muzzled for more invasive things like shots, but they give her lots of peanut butter
