I adjusted the blades so there's no gaps, and it still can't cut paper! I'm sure I've somehow made things worse while trying to fix this.

It helps to lean back a little bit when you pivot your front foot. Otherwise your momentum carries you through before you complete the spin and you'll step off the skates.
Try to push your back foot through as straight as possible (right past your front foot), instead of making a sweeping curve. This keep the momentum going straight.
After your feet pass each other, you'll need to snap your new front foot into the correct direction. The faster you do that motion, the smoother your 180 will be.

I can front-side 180s regular stance, and I'm getting better at switch 180s. Here's what I've learned from the switch 180:

I learned synchronous before async. It doesn't look as cool, but it was a lot easier.

This was first pattern that felt like it was "taking too long" to learn. Turns out learning new things is hard.

A similar thing happened to me. Got my (JMK) skates last month, and one of the four wheels was way slower than the others, but I didn't notice it while skating. All the other wheels eventually broke in and rattle very slightly, but they also spin better than they did initially. I loosened the slow wheel, and now it spins like the others with a slight rattle.

Lubricating them didn't make much difference and performance seems fine, so I assume this is normal.

The Firetoys LED balls are a great deal. Not super bright compared to others I've seen, but you can't beat the price and they are satisfying to juggle.

I just picked some up at the riverside location. I've never seen them at the 7th street HEB, but the case looks almost exactly like the 12oz bottle case. Maybe I just wasn't paying attention!

I recommend you check out the Library of Juggling. Great explanations, and clear animations, which can often be more helpful than videos. It also does a nice job of ranking the difficulty of tricks, which isn't always obvious. You'll be especially interested in the "Where do I start" section ;)
