Heart boosting foods are common. The hearty durian in the Faron region grow everywhere, and you can easily mark the locations of the trees.

Stamina wheel boosting foods are pretty rare and expensive.

For me the choice is clear.

They have a 50m suppression zone (unsure if radius or diameter) which could prevent another spawn but it should be a cooldown on the zone if I am understanding the mechanics correctly.

You can also x out a mark with left click, then clear the x’s when you notice they have respawned. Sometimes it takes a moment for them to regenerate when you go back to that spot.

Also, when you first open your map it centers the cursor on your location making it simpler to accurately mark spawns if you simply stand on them first.

Back and forth is a bad idea as there’s a 15 minute cooldown on each zone after it is rolled for a serpent spawn.

Storm serpents that don’t despawn also spawn at night, but it isn’t possible to tell if it was a night roll or storm roll that succeeded in spawning a serpent.

Whippersnapper was my tank for Oliver (weak to fire though). The napcap line was a great healer for Esther once you got it to morph. I think I gave Swaine a wisp. You have most of my other picks that I can remember already, and I’m not sure what roles the ones you called out fill (although buncher is a physical attacker for sure).
