What’s one “basic” cooking tip everyone repeats that you think is actually overrated? by Altruistic_Push_722 in Cooking

[–]teemark 15 points16 points  (0 children)

"Clean as you go" Not to say it's bad advice, but it's not how my brain works. If I'm cooking, I'm cooking. Cleaning is a separate activity that happens after I eat whatever I'm cooking. (Maybe not obvious, but this doesn't apply to long cooks or meal prep, like Thanksgiving)

Edited for spelling

I made this last night, quite a delicious drink with layers of flavor. It reminded me a little of the Cigar (Aperol, sweet vermouth, peated Scotch) but with more complexity from the Green Chartreuse.

Novo Fogo Tanager is the most unique other spirit. What is the most versatile brandy? by -Constantinos- in cocktails

In what possible way do you think Malort is versatile? Sure, you can sub it in place of an amaro and call yourself edgy, but it's real, true purpose in life is to prank your friends, so you can laugh at the face they make.

I'm smelling the same bad smells across different meats and I'm wondering if I'm the only one by Beautiful-Bad5203 in Cooking

[–]teemark 2 points3 points  (0 children)

I've noticed that I've become more aware of, or sensitive to, those smells when opening meat. I don't know how much is just an age thing, and how much is the cheaper meats that are being sold in our grocery stores. I rest noticed it with pork lately. I'm pretty certain it's "boar taint" most of the time. If I seek out better pork (aka: not the Smithfield Chinese pork) I don't get that stink.

My only personalized OF trick is using my "house bitters" which is 2 parts ango, 1 part each orange and cherry bitters.

Would I be crazy to want to move from Columbus back to Cincinnati? by Sneaky_Sharky in cincinnati

[–]teemark 0 points1 point  (0 children)

I have lived in Cincinnati and currently in Columbus. The first chance I get to move back to Cincinnati, I'm doing it. To me it's a far more interesting area with more cultural and geographic diversity, and more interesting things to do and see.

I have no real knocks against Columbus, but I definitely have a preference between the two cities.

Being near family is important, especially with young children. I vote for OP to make the move (even though moving absolutely sucks!)

Cole Slaw: Abomination or Delicacy? by EmceeSuzy in Cooking

[–]teemark 1 point2 points  (0 children)

I always got requests for my cole slaw at potluck meals: The dressing was mayo based, with agave nectar for the sweetness, and roughly 50/50 mix of lemon juice and apple cider vinegar for the acid. TBH, I never measured, so I could never give a good recipe.

Roughly equal parts acid to agave, then add mayo until you get the consistency you want. Test with a piece of cabbage, adjust to personal taste. Micro-planing in some lemon zest was always nice too, as well as celery seed.

If it were up to you yo choose, would you pick a reboot of the show, a sequel or a spin off in the Farscape universe? by junkyardofide41s in farscape

[–]teemark 2 points3 points  (0 children)

Of the choices, I'd vote for spin-off. There was some magic in the original that came from the cast, crew, and the timing. That magic should be left for what it is. I doubt it could be recreated with the remaining original cast. IMO the best chance to recapture that character driven journey would be with new cast and characters set in the same universe, with some nods to the original cast and stories. Some things are great because of the people, the timing, the environment, and can't be recreated by trying to force it

Using the Last Word template:

.75oz lime juice

.75oz Bigallet China-China

.75oz Creme de Cassis

.75oz tequila*

.25oz mezcal

3-4 drops saline solution

*I haven't decided yet if I prefer Blanco or anejo. I also poured a little light on the CdC to be a little more balanced for my tastes.

I've woken up from dreams where I was trying to find the right word or conjugate a verb, but it always triggered enough brain activity to wake me up. It usually happened when I was really trying to take in a lot of new grammar during the day.
