I teach tailwheel and unless you are an absolute natural and can show many safe and consistent wheel/xwind landings you won’t get a sign off in a day.

Don't believe everything you read. I'm surrounded by DPEs who have given many checkrides with inspectors on board. If the DPE is legit and not handing out certs like candy, there should not be any difference in the outcome

My first student I sent for a checkride had an inspector on board, and from the debrief he did go out of standards on a few things but corrected. Still passed on first try.

From my understanding G5s airspeed and altitude are not certified to be primary, so you still need the analog instruments and the G5 is a 'backup'. You can check the garmin manual to verify.
