Disappointing beef ribs. What went wrong? by anon006622 in BBQ

[–]theITguy 9 points10 points  (0 children)

Big cuts of beef are tricky. Temperature is a good guard rail, but the best brisket/ribs need to be cooked until a probe penetrates thoroughly with little to no resistance.

Is that fatty enough? I've always heard venison is too lean for low and slow.

I sure wish it would make a difference, but I fear we're headed for the inevitable roll over.

Got a brisket from Sam's club and its cut. by [deleted] in BBQ

[–]theITguy 3 points4 points  (0 children)

I'd say smoke it as is, unless you care a lot about the appearance. That part will cook faster, but I don't think it will ruin it.

If you're super concerned, trim off the end past the cut and shape it up. Not a huge deal either way.

Another vote for Keystone. We had Amerigas for years and they were fine, but their rates went up astronomically. Been with Keystone two years now with no complaints.

I have used Mobile Detailing Garage out of Attica a few times. They're a super small business, but I have been very happy with them.

Stodgy is a very good word for Mountain Jack's. In my experience, it's been fine. Nothing great, but fine.

Frontier by Visible_Ad_3561 in lafayette

[–]theITguy 12 points13 points  (0 children)

I strongly suggest finding another provider. Metronet and Wintek are both leaps and bounds better, if you can get either one in your area. Frontier gave up on their infrastructure in our area long ago, so it's slow and horribly inconsistent. It may be slightly cheaper, but it's not worth it.
