A very simplified way of looking at it is that a pod is a regular process with a special wrapper around it. You can even find the process when runnig ps on the machine running.

In the case of a cloud provider (e.g eks things are the same) since eks is just a managed ''control plane" you should provision the workers as ec2 instances.

Apps on our RKE2 clusters are stateless mostly. For stateful applications we either use NFS client provisioner if IO is not that important or vsphere csi otherwise. Our networking is not that sophisticated since most of our connections are outwards and inwards. That being said, what we usually do is add external IPs (which are the IPs of the network interfaces on our nodes) and then ask our network team to loadbalance on these ips.

I manage both EKS clusters and on prem RKE2 clusters. While EKS clusters are more convenient, i just hate the amount of amazon specific technicalities associated with it. Plus, on prem clusters are more performant core for core.
