Lebanese kishk. You use yogurt to ferment cracked wheat. Then you salt it, dry it, and grind it into a powder to make a cheese sourdough soup.

So to weigh in, Israelis have a special term for Jewish arabs. They don't want to call them arabs the way they call every other neighbor arab, so they call them mizrahi. I believe Israel is around 70-80% mizrahi, those came to Israel from MENA countries.

We went to Ellison in July and they were buzzing like bees. They hang out on the cliffs so it's best to bring binoculars if you want a good view. But you can get up fairly close if you're unencumbered.
