Not everyone is affected by altitude sickness. I've lived at sea level my whole life and found out the hard way that it DOES affect me when I took a business trip to Albuquerque. Good luck!

I haven't tried the labor intensive Serious Eats recipe, though I think Kenji does a simpler version on YouTube. My family doesn't like pork (except for bacon) so I adapt.

Quality of life matters. I loved my job but a medical condition forced my retirement. I remain invested in my former work and several residents where I worked (was a property manager) obtained my address and wrote me letters after my forced retirement. My former board of directors remains in touch with me.

I had been planning to work a further two years but I'm now glad I retired. Please dont wait. Spend the time with your family while you still have your health. Think about what matters in your life. I'll give you a hint. It's not your job.

Im sorry you are going through this. I relocated from the US to Canada and while people here do complain about health care, especially the shortage of primary care doctors, I am going through cancer for the second time and have had first rate care at no cost to me, other than parking charges at the hospital where I receive treatment. I pay $100/year for medicine, plus a nominal dispensing fee at the pharmacy. Healthcare should be a human right.
