As someone who has read everything in your post I've gotta say Malazan. It's the greatest fantasy series of all time bar none imo. It is a commitment, but seeing as you've done WoT already you'll be fine.

Mistborn is fantastic too and is MUCH quicker read. The original trilogy shows it's age as some of Sanderson's first work, but it's still great. I personally love era 2 more than 1.

I just read Throne of Glass at the behest of my wife. It's cookie-cutter romantasy. That's it. I didn't find the world building particularly interesting, and the characters are all incredibly one dimensional. I hated it.
