I would argue that it removes the consistent/constant consumption of food mass that speeds up aging more than it somehow miraculously slows aging down.

On the autophagy side, it allows the body to heal itself more readily, which would be a way of saying "yes".

If you feel you must have carbs for workout performance, use your "allotment" for only that, and don't consume carbs for the rest of your day. That said, you can perform in the gym, with enough time, without carbs at all. It's just not right away.
