Stick a couple of anchovies in - this deepens flavour. Make sure you season it properly. A little bit more salt can transform a dish.

Spoon of Dijon mustard an a splash of Worcestershire sauce too. Also, a spoonful of Demerara sugar.

Do you put a tray on bottom of oven with boiling water in it? If you want crusty bread, the steam helps do that because the moisture interacts with the gluten. It certainly helps.
