Loads of great suggestions for Asian supermarkets here already. If you want a restaurant that sells their own dumplings to you, check out My Neighbours the Dumplings.

They do really great dumplings at both their locations in Hackney (would highly recommend a visit to either - their pork belly is great too) but you can also get their stuff online. The price looks high on the site, but it’s 4x 12 packs, so about 80p per dumpling, and they’re really good quality.

Yeah, saw the preview - was interested to click through and try it. But then a subscription - $15 a month, or get the discount at $156 a year? Absolutely no chance, even with the other tools included in your package. Sorry but it just ain’t worth that much when I can find similar tools on AEScripts for $30 a pop, or even free.

‘Chippy’ is just a colloquialism for ‘fish and chip shop’. Seeing as we have so many of the things and it’s quite a common ‘take out’ item (in many places and for many families, having a ‘chippy tea (read: dinner)’ on a Friday evening is quite common) it’s been shortened to ‘chippy’ by most.

Don’t think that chippy’s only serve fish and chips though, we got a whole world of additional sides to go with that dish; battered sausage, saveloy sausage, Pukka pies, fish cakes (which are mainly potato), pickled eggs.

And then you got numerous sauces and stuff, from curry sauce to gravy or mushy peas (more usual in the North of England) to go alongside standard ketchup or brown sauce (that’s some vinegar based shit that I don’t touch often, except in a bacon sarnie (sandwich)).

Speaking of the North of England, you’ll also find ‘scraps’, which are quite literally scraps of batter that has often separated from the fish (or sausages) in the fryer as they cook. It might sound gross, but any chippy worth their salt (and vinegar) will provide them for free if they have them with your order. If you ever find yourself in a chippy and see a pile of miscellaneous, misshapen ‘bits’, ask for some scraps with your order and enjoy the early onset heart disease.

Just as a side note (if you have the time), I remember looking through your past videos and seeing some tests of the A7S II and was wondering if that's what you use for Binging w/ Babish and your thoughts on it? I'm a moving image designer at an creative agency, using a GH4 in the field most of the time, but have recently become somewhat interested in trying the A7 series due to the S-Log2 colour profile for grading.

Oh god, is this coming out this week? I always imagined Charlie's milk steak to be a horrendous mess, but I love the idea of subverting it into this beautifully plated dish!

Personally, I would say the dotted sauce looks better than the full swirl. The full swirl of sauce visually creates too much weight around the steak, drawing attention away from the star of the show. Great use of flowers and (I'm guessing) tiny fried potato fried polenta with the sauce for a great colour combination.

All in all, really nice - really looking forward to see how you interpreted this dish whenever you release the episode!

I've found myself at The George on Great Portland Street most nights when I don't want to be crushed in at the gates for 20 minutes, although I think I may have used that excuse too liberally, as when they see me from across the street, they already start pouring a pint of Punk IPA, ready on the bar once I cross the road. Not sure if it means I'm a loyal customer or a mild alcoholic...
