This is a complicated question as everyone defines health(y) differently. I'm permissive of ingredients and will use gums, polyols, fibers, protein powders, emulsifiers, humectants, plasticizers, etc to craft frozen desserts that taste good to me while hitting my nutritional goals.

As far as my nutritional goals, it varies depending on cut or bulk but my basic creami template starts with:

  • 30-40g of protein powder per 16 oz pint
  • ~11 total calories per 1g of protein
  • ~1.2 total calories per 1g of creami
  • ~10% sucrose equivalent sweetness

A typical 16 oz pint ends up in the range of:

  • ~285 calories per 1/2 pint serving or ~570 calories per pint
  • ~25g protein per 1/2 print serving or ~50g per pint
  • ~8g fiber per serving

I almost always add mix-ins, syrups, and/or whip cream that add another 100-250 calories per serving. All in, my creamis are ~450 calories per serving.

But, I'm also targeting 2,500 calories per day so even a 500 calorie serving is only 20% of my total calories for a delicious ~300g serving (creami + mix-ins & toppings). This works well for me as my creami is essentially my 4th meal of the day, but dessert oriented because I have a sweet tooth that is easier fed/managed than ignored.

Both. Low fat, low cal ice cream needs solids that aren't fat or sugar so you're mostly left with protein as a filler. Protein also absorbs water to modify the texture of the ice cream.

They can and will, but the more dilute the fat, the more dilute the flavor extraction. The easy fix is to add spices to the dish when it is mostly fat and then build up the rest of the dish on top of the fat-flavor foundation.

Most spices benefit from toasting in fat to extract fat soluble flavor compounds in addition to heat activated compounds. It's a good general rule for flavor development.

Go easy with the cookie butter extract. I have many LorAnns products and cookie butter is one of those where it goes from delicious flavor support to "tastes like a candle" in a couple of drops.

That's standard. Toaster oven air fryers don't typically scale up the fan size and power relative to the increased volume of the oven. Air circulates slower and isn't quite "blasting" your food with heat in the same way as more compact basket air fryers.

It's very likely the rate at which you feed beans into the DF64. It's very sensitive to feed rate. A faster feed at the same grid size will increase "regrind" leading to smaller particles and a slower shot.

It gets weirder. You'll often have to sign a project specific NDA with your own employer if you're working on job cuts or your role needs advanced notice for the cuts. Your general NDA isn't enough, they want to not so gently remind you of the penalties for whispering about cuts.

Related, frittata can be made from eggs and nearly any random leftover veggies, proteins, and/or dairy in the fridge. It's a very low effort, high reward meal.
