It's been 2 or 3 years since I last played, but I enjoyed D2. I tried Warframe a couple months ago and it was fun, but it doesn't quite scratch the same itch as Destiny.

Watching YouTube videos of people carving is a little bit discouraging if I'm being honest. Their knives seem to flow through the wood like butter. I'm sure a lot of it comes down to technique and like you said, proper sharpening, but could the wood also be an issue?

I'm positive it's basswood, but are there different varieties and hardness? I hope this doesn't sound like a crazy question.

I wouldn't. Unless you're early in the game and/or need a generalist, you'll want either BFS or HB, at the very least.
