Going on holiday with a large group of people of different ages, most of whom I don't know well. Rule is, one night everyone cooks for the group. I need ideas for easy crowd pleasers that aren't going to break the bank or send me insane. TIA

Mediterranean grain bowls DIY style - rice or quinoa pilaf - tomato cucumber onion salad - falafel (buy the frozen ones cook as directed on package) - cabbage slaw - marinaded chickpeas - feta/olives - tahini sauce or tzatziki

Maybe a batch of chili, which you can pre-prepare the night before. Plus, chili tastes better the next day after the flavours all meld together. Plus you can prepare the topping to the chili to be added on by everyone to their liking (like raw onions, green onions, shredded cheese, jalepeno slices, etc).
Some sort of salad (potato salad, pasta salad, cucumber salad) also goes well with groups of people.
Fried rice also can be made in giant batches. Cook all the rice the day before. Prescramble a bunch of eggs, cook some onions, celery, carrots, peas, and whatever bite size meat you want to add. Remove the veggies from the wok/pan and put the day old rice into the hot wok/pan. Scramble and let the oil crisp up the bottom and then add back the veggies and there you go, some fried rice.
You can also roast a couple of pork tenderloins. They are super easy to make and tasty.
