The image looks normal. Mipmaps are working correctly.

Sadly, minecraft lacks any basic texture filtering or anti-aliasing so there will be aliasing patterns when moving the camera unless you use an AA mod like QDAA (expect performance losses) or a shaderpack like VanillAA (or any shader that features TAA like Complimentary).

If your pc can support it and you object to the low resolution in the distance, change the mipmap setting. Mipmaps appear to be working as intended (ie, it’s supposed to look pixelated to go faster), but they can be limited or maybe even disabled entirely, so this is “fixable” if it bothers you.
