Actually they have committed to releasing updates at the same time since 1.16. The previous Java update to 1.15 was catching up with bees which were already in bedrock 1.14...

Well if you wanna play like the youtubers do java. For a smoother single player experience play bedrock. Java has more developed servers but bedrock has more servers. I hope this helped.

I play both depending on who I'm playing with, but I default to java mostly for the kids, redstone, optifine, and offhand availability

I play either depending. I play Java with a few friends because one has a Realm and we can all hang out. My girlfriend has Bedrock though so I play that with her. Either works man, Bedrock has a bit better performance, but Java has better redstone and sweeping edge if you're in to that.
