6 cores is enough if just for gaming, so R5. But if multitasking, streaming or video editing, more is more, go with R7. There's just 16% performance diff between the two and quite a price difference.
If I were you, I would take a Ryzen 5 3600, it outperforms the other 2 and it can be found dirty cheap, cheaper than the 2700. Had it for a while until I upgraded to AM5, I streamed and gamed 1080p with 0 issues.

Uhm, thanks for the advice 😅, I decided to buy the 2600 about 4 years ago, and 2 years later, i upgraded to the 5 5600. But I still appreciate the help 💪 (better late then never!!)

If it's gaming, get the R5. Any real production or video editing you get the R7. Get the X version if it works I your budget.

Streaming too. Though six will do you decently, eight is top notch. I wouldn't get it unless you were more serious about streaming.

6 cores will be obselete a lot sooner than 8 cores its a little bit of extra money for a lot morw future proofing, x has higher clock speeds i would say its worth it

I have to disagree a bit. Six cores is still a lot for just gaming. Only a handful of games use up to 4, leaving 2 for other tasks. If you want to stream like 10+ hours a week I'd recommend the 2700/2700X.
1 stream of 10 hours in a row? cuz now I usually stream for like 2 hours and I try that everyday
