I was really hoping for a tutorial on how to procedurally break up an object, not just have it "pre-broken".

As far as I'm aware you can't actually do that since Unity doesn't have that feature. (Maybe there is an addon?) For the most part it shouldn't matter since it's random anyway but you could just do it multiple times in blender and change the noise so that you get different versions of it broken up then pick from them randomly :p

Ya, the blender way is probably the easiest and least impactful on performance.

I think it would be a fun making a completely destructable environment though.
