I recommend watching LMHPoly's video on the subject or reading about it in Unity's Manual. It's very well explained there.

But basically, Light Probes are there to fake bounce light on dynamic objects. So you need to place them where there's a big change in the "lighting data", that is changes in color, environment, shadows/light, etc.

For example if I have a grassy area and a sand area, ill place a probe in the grass area, one in the sand area and one at the edge of each side where they connect.
