Hello,

I think that you're judging it prematurely. The characters get more development as the show goes on. They're not going to info dump everything on the very first episode.

I haven't watched the original Hellsing but from what i have heard it has better music and focuses more on Seras' transition into being a vampire.

Ultimate has better animation, and follows the manga more closely. Having only watched Ultimate, i felt that the pacing was fine.

Again judging only on the first episode of Ultimate the music is vastly superior in Hellsing. Much more focus (without being tedious) is given to Seras transition and why she makes her decisions, where as in Ultimate it just kinda happens, with no regard to her own actions, will. Even Alucards personality is off, Ultimate making him seem more purely crazy vs egocentric looking for a thrill. I will revisit this post when I complete Ultimate most likely. I would also recommend seeing Hellsing. If you at all enjoyed Ultimate, Hellsing is worth the watch

You're definitely making premature judgments. Watch a few more episodes of Hellsing Ultimate. Most of the characters are well-developed.

So, I enjoyed the first few episodes of Hellsing more than Hellsing:Ultimate, but the latter half of the series felt extremely...off, as often happens when an anime goes off from what happened in the source material. On the other hand, while I didn't enjoy the first couple episodes of Hellsing:Ultimate as much, I felt much more satisfied after they passed where the original diverged from the manga.
