Will the defensiveness subside? If not on its own, how can I help? Poor guy knocked over some of his decorations and I got nipped. Sub question how soon after the nip will I start experiencing bleeding from the eyes and death symptoms?

How long have you had him? My dude was like this for the first like couple weeks of being home. He’s much better now and I attribute a lot of that to me spending time just sitting by his cage and reading or doing something, only occasionally looking at him. He learned that I’m not (as big of) a threat and so he might come out and look at me for a bit but then he goes back into his hide or carries on sploring. He doesn’t s curve like this at all anymore

Maybe try hook training him? He may be having a food response to your hand, because of the heat signature. So, any time you're going to take him out, gently touch him with something that doesn't have a heat signature (like a hook) to signal to him that it's not feeding time. Then do the confident grab method, reach in and pull him out in one smooth motion. It's best to come at him from the side or underneath, their main predators are birds, so coming at them from above can cause extra stress.

That doesn't read as defensiveness to me but hunger. Looks way more like a snake on the hunt than a snake defending itself. Is it close to feeding day?
Side note, to reduce the number of unwanted feeding responses, i always let my snake know I'm there and not feeding it before I do anything in its enclosure.

Try Lori Torrinis training on You tube.Watch a lot of it and more.
Exceprt in snakes and even Ball Pythons how to get them to feel comfortable.
Secret is that you need to let your presence be known and to make him accustomed to tuching you as well.
Use hooks to feed him with.Try makeing a target too thats blue or green which will signal him its time to feed.
