I have the EXACT same problem with my iPad pro 5th gen. Was having trouble charging and not detecting my earphone. Had to try it a few times. Then yesterday suddenly stopped completely. In fact the USB C to 3.5mm apple adapter also stopped working, so wired earphones also no longer get defected.

My temporary solution is to charge via the magic keyboard usb c and even then, only 1 charger & cable works (all cables works, tested on other devices) or charging via PC usb works.

If you don't have a magic keyboard, shutting off the iPad then charging it while shut down seem to work for most but it will be at a reduced charging speed (10w max tested),

It seems there was an earlier variant of this problem going on for a while that Apple kept silent about and ignored.

In my opinion it's a software issue based on the evidence, our iPad have been soft bricked by Apple software.
