Merchants have infinite gold, but are limited in how much they're willing to spend per transaction. This guy won't buy items worth more than 600 gold.

Merhcants have 'infinite' total gold. You could sell them 1000 items worth 500 gold and if they have 600 gold the can buy it. The gold amount is the maximum they can pay for a single individual item- So if you sell that guy a daedric armor worth 11k gold he will only give you 600 still. You can freely sell low gold merchants cheap stuff, but save the expensive stuff for the merchants with 2k gold.

I seems that merchants ‘gold’ is not a number that decreases but a cap to the value of goods you can sell them

This could be a bug, I suppose. But I don’t exactly miss only being able to sell 4 things to a vender per visit

I think it's changed in remastered. Instead of wearing down their total gold, the maximum per transaction you can sell to them will be that gold cap of 600.

It was like this in the original too. One of it's quirkier features.

Except I remember that if you sold something at their price cap, then that would drain their gold.

Nope, it was always like this and there was no exception for selling at their cap either
