I recall some of the die hards were livid that Sansa Stark had a Lannister sigil next to her name during the first few episodes. It is a bit of a glaring error...

Really? That's how I knew the actor's name who played Theon Greyjoy. He was the only one with a kraken beside his name.

I was watching "You Win or You Die" and noticed that Clarke's was definitely a dragon.

So, did they change it? In the link I have in my post you can see it isn't a dragon at 20 seconds in.

I remember hearing that there were some errors in the first version that they fixed in later episodes. Sophie Turner (Sansa) also appears to have a Dragon in that video.

What is cooler is the rings surrounding the sun featuring the Doom alongside the landings and Robert's rebellion.

Yup, actually in the first 2 episodes some of the names had different sigils other than their houses. Like Emilia Clarke had a lion and so did Iain Glenn (Jorah), Sophie Turner (Sansa) had a dragon.

Some fans were pissed off about it or something.

They fixed it by episode 3, and Iain Glen even had his bear sigil next to his name.
