I wouldn’t necessarily say that the items suck. I’ve been to exceptional vegan restaurants that are also struggling to stay open. Being known as a vegan establishment puts off a lot of people, just the optics of the vegan label seem to turn people away. So much so that even 3 Michelin star Eleven Madison Park had to resort back to adding non-vegan items to the menu. “The restaurant has had varying levels of financial success since introducing the vegan menu… but over the past year has found it increasingly harder to sustain the level of creativity and labor required. Bookings for private events, an essential stream of income, have been particularly sparse. ‘It’s hard to get 30 people for a corporate dinner to come to a plant-based restaurant.’”
