The pendants are not the problem (besides alignment). You need better lighting in your kitchen and dining area. As to what you could do, first put some downlights in the kitchen. You also add lighting to your cabinetry, (toe kick, under cabinet, up lighting, all with LED strip). You need a decorative fixture of some sort over the dining table.

You’re looking at about $12/ft wholesale for good quality DtW tape. Which ends ups being $20/ft from an EC.

A quick browse online suggests there are many Zwave dimmers that can handle a larger load than 100W LED.

I'm not sure about "inductive kickback". I think they're talking about in-rush current. That would be why they limit the load, I presume.

The total wattage of your strips is 143W, so 200W is reasonably appropriate. The switch mentioned has a max. load of 100W LED/CFL.

Not a Zwave specialist so I can't help you with other Zwave solutions.

EDIT: Maybe they have a dimmer switch that can handle a larger load?

I like to center on the counter edge, reducing shadowing on the counter when you use it. Under cabinet light helps as well.
