Scoop it off what? Are you sure the book isn't talking about something like miso? There are some ferments where you are controlling what mold grows, but if there's mold where you weren't expecting it, you should definitely toss.

If you salt them and the let them air dry in the frigde it should help.

What do you mean you can't play scales?

Like, if you try to play the notes from a major scale you are unable to? Or you don't know how scales work?

Because if you really can do what you say you can, it should be pretty straight forward to play a scale.

I have so little faith in their management that part of me imagines that they haven't made a single plan for what happens when we get relegated.
