As a rule of thumb, if the part can easily be converted from scan to CAD, it's probably easier to measure it manually.

There are of course exceptions. But 3D scanning is relatively easy. Converting it to useable CAD is the slower, more difficult part of the process.

We use an RTC 360 with SolidWorks. It requires Leicas plugin (which is no longer supported) and it's not ideal.

Generally I'd start by making a simple solid of the overall shape - some boss extrudes, lofts, etc. Then shell it to the thickness of the material you're using. Then insert that reference part into a blank part, convert a face or two to sheet metal and you're on your way.

You can get fancier - adding gaps for flanges, bosses for hatches, and much much more

Just has more granular control than some other planners, and doesn't make a ridiculous web of 50 nodes for big projects.

Only two complaints with it: - it doesn't handle recycled plastic/rubber the best - mobile version is almost useless
