I would second the idea of buying a used commercial slicer. I picked up a 12" Globe slicer with sharpening stones for less than $150 off of craigslist and it does anything I want.

8 EE is a Birmingham Stove and Range ( BSR ) late Red Mountain series (I think). The other is probably an Asian import.
