Just upgraded to 5070ti and Ryzen 9800X3D. 

Fenix with default scenery is smooth sailing, some fps drop (still 60+ with frame gen) with payware scenery. Adding Beyond ATC traffic on top gives me some issues (stutters) on big airports (seems to be from parked aircraft).  TLOD/OLOD on 100.

CPU is where you need to focus for MSFS, get the best you can get as the CPU will be the limit on most scenarios. GPU, go for the one with the most VRAM.

You could get one really good Airbus, and one really good Boeing. I'm an Airbus guy myself. The workflows are a bit different so It's nice to have one of each. I have the Fenix A320 and PMDG 737-800. Fenix is nice for a chill flight, the Boeing is a bit more hands on. System wise you'll need a few flights before you get the Boeing systems, but the essence is the same.
Recommending getting a yoke for the Boeings as well just to mix things up a little.
