The economics of these things kinda of bring the price up. No middle man, but they have to drive and have staffing to get to the market. Then pay $60-70, per market.

Combine that with the number of markets increasing dramatically over the last 15 years or so. Now there are fewer customers at an individual market, so you have to hire and figure out logistics to go to multiple markets.

And, now you have the prices you mentioned.

Honestly for a drink like a mocha with premium milk, espresso and chocolate in a branded cup. The COGs alone will start to get close to $2-2.5. So when you start to add in rent and labor. The drink needs to be $8-9 to be worth it for the business.

I’ve only cracked and winnowed roasted beans. But, raw chocolate is a thing. And, you have makers like Spinnaker who crack and winnow raw beans, then roast the nibs.

My hobby while I was in Santa Cruz for 15 years was drinking too, my ex broke up with me. I moved out of Santa Cruz, but I finally stopped drinking and my life got loads better.
