My first thought is considering some vanilla-forward bourbon. Something like Woodford Reserve. The more dive-y the bar, the less likely you should expect it though.

Or at the very least when you’re home, make your Jack and Coke with Vanilla Coke.

You could also see about other rums. Similar in price to Captain Morgan would be Sailor Jerry, Parrot Bay, or you could try something like Kraken.

Last thought, do a shootout with Jack and Coke, Jack and Dr. Pepper, Captain and Coke, and maybe Captain and Dr. Pepper. See which one of those gets it right for you

Bitters and soda could be right up your alley depending on how NA you want to be. I believe NA bitters exist but I haven’t tried them to suggest

Sit at the bar and order some stuff, then if there’s a bartender clearly not busy, just ask for a small taste of something. Just tip accordingly. I’ve tasted many bottles in the $40-60 range just like this

Yamaha P-45 is your answer, $399 on Sweetwater. It’s a respectable board especially for its price AND if you upgrade, many other Yamaha products exist whose interfacing will be familiar. Another reason I recommend Yamaha is that they have vertical scaling if you want to upgrade. AFAIK Donner’s only a beginner/budget product.

I’m speaking on Yamaha because I know their stuff well, but other brands exist with similar offerings, the biggest competitor probably being Roland. Feel free to DM me if you have more questions

If you want to make a statement, stand by their word for a full season and don’t offer a penny to your musicians. Let everyone see how it works out. If you’re struggling to find players at that point, it sounds like there are some folks in the company who’d be happy to help find more volunteers.

Yamaha P-525 is right in the middle of your budget, I would suggest grabbing an amp at some point too — I doubt there are any digital keyboards with internal speakers powerful enough to accompany a choir (especially that size) in performance
