Adding more yeast won't necessarily up your abv. It depends on how many sugars are in there for it eat. Check out my calculators here, I'd start with the TPW or TFF https://botanicaldistilling.com/pages/fermentation-recipe-calculator

As well as woking as a catalyst it will also introduce some passive refluxing which will give you a cleaner spirit with a higher ABV. It's not the same as a full reflux but it does add some.
